Monday Pick-Me-Up

Mr. A is feeling a bit blue today, so I decided to make him a pick me up for lunch time. When he was little, he and his mum used to bake all the time. And his favorite recipe was fridge biscuits. They are really easy to make, take no time at all and use store cupboard basics. They are also a real crowd pleaser when it comes to children (making them or eating them). The beauty of them is that you can add just about anything you want or have, in with the mix to make them extra delicious. Makes around 12 squares

  1. Melt 150g of dark chocolate and 120g of Butter in a bowl
  2. Put 120g of digestive biscuits in a bag. Close the bag making sure to try and squeeze the air out. Bash with a rolling pin until the biscuits are all broken up
  3. Pour the biscuit crumbs into a clean bowl with 60g of icing sugar(sieved)
  4. (optional) Add some surprises to the mixture. I added a small handfull of mashmallows chopped up and a chopped up fudge, but you can add anything; nuts, dried fruit, white or milk chocolate chips, other sweets
  5. Add your biscuit/icing sugar mix to the melted chocolate and butter and mix
  6. When combined pour into a small greased/lined dish. I used a small roasting dish, but a loaf tin would work well too. Even out the mixture and add a small sweet decoration (buttons, smarties, sprinkles etc.) at regular intervals to define each square. Place in the fridge to set.
  7. When set, cut your squares and enjoy.

I was just cutting up mine when the new Olive arrived in through my door. I took it as a sign to put the kettle on!
