Mr. A’s Rocky Road

We’re getting into bbq and picnic season (or is that just my wishful thinking?), and the less effort needed for snacks and lunchtime treats and there transportability becomes an issue. An I think we have found a new winner in these subjects. We have a new recipe for rocky road. ‘More fridge biscuits?’ I hear you say, well, yes. But they go down a treat here, they are perfect for me to have a little nibble at 11’s and brilliant for bringing to work or play without the fear of being bashed around in a lunchbox. Try them, you’ll be converted too!

  1. Melt 100g of butter and 450g of dark chocolate in a bowl
  2. Bash up 150g of shortbread in a bag using a rolling pin. Be sure to leave nice bite sized pieces of biscuit
  3. Chop 200g of marshmallows and 150g of white chocolate
  4. Add your marshmallows and white chocolate to your broken biscuits. Coating the marshmallows in the crumbs will stop them sticking together
  5. Add your biscuits, marshmallows and white chocolate to your melted butter and chocolate and mix well.
  6. Pour into a greased/lined loaf tin and leave in the fridge to set

It’s that easy. You can also get creative and add anything else that takes you fancy. I’d like to add raisins or dried cranberries and some nuts but I’ve got a fussy eater here to deal with. C’est la vie! Enjoy with a carton of juice, your morning coffee, or after dinner. They keep really well and are perfect for those hectic weeks where you don’t have time to bake but need to have something as a treat.
