Oh Canada!

I love Canada. I think I may have mentioned that before here, but just to reaffirm it; I love Canada. I lived there for a while a few years ago and have been yearning to return ever since. So, in recognition of Canada Day last Thursday, I made Clodhoppers! Yum. Clodhoppers are a deliciously more-ish Canadian chocolate treat that I used to survive on. You can’t get them in Europe, in fact you can’t even get the Golden Graham’s that go into them in the UK. So I had to haul a packet back with me from Portugal. Thats just how much I wanted to recreate these yummy treats. The recipe is so simple and goes down a treat with everyone. Have a go!

  1. Melt 2 cups of Dark Chocolate and 2 Tablespoons of butter in a bowl
  2. Roughly chop 1 cup of unsalted cashews and add to the melted mixture
  3. Stir in 5 or 6 cups of Golden Grahams trying not to crush them too much
  4. Spoon out the mixture onto baking paper and leave to cool. When cool keep in the fridge
