Milk & Cookies

It’s back to school time again, and therefore time to start making after school treats. One of my favorite things after being out at school all day (even I’m still subject to the odd school day) is to come home to a plate of cookies and a giant glass of cold milk. Just right to keep me going ’til dinner time and it makes me feel about ten to lump my schoolbag down, and leave a trail of  school uniform behind me as I head straight for the treats.

So here is the recipe for my lovely chocolate-chip cookies. Crunchy on the outside and chewy inside, just the way they should be.

  1. Cream together 220g of caster sugar with 220g of butter and an egg yolk.
  2. Sieve in 250g of plain flour and 1/2 teaspoon of bread soda and mix.
  3. Finally mix in 150g of chocolate chips. Shape the dough into a sausage, wrap in cling film and put in the fridge to set.
  4. When solid (takes anywhere from half and hour to an hour) unwrap your dough and cut into discs. It should make about 16 cookies
  5. Place the cookies on a lined baking tray (leaving room for spreading) and cook for around 20 minutes (or until golden at the edges) in a preheated 180 degree oven

Enjoy! The time you leave in your cookies will depend on how they turn out (less time for chewy, more time for crunchy). To make an extra special treat why don’t you make them into ice cream sandwiches? Simply take your chosen ice cream flavour out of the freezer and allow to soften. Then spoon it between two cookies, place in a freezer bag and return to the freezer until you’re hungry.
