Onion Overload

I looked in the vegetable basket the other day and found nothing nut onions. And not just one or two forelorn looking onions. An army of them. I think they multiple at night while we sleep. And so I’m left with the dilemma of how to use them up.

But its Autumn, and there is a chill in the air, and its soup season, therefore Onion Soup was called for. Rich creamy onion soup, eaten with a fresh baguette and lashings of butter. Delicious. So for all of you experiencing the same onion overload as I am, here is a great, simple recipe for White Onion Soup.
