Great British Classics

Every now and then every one needs a taste of the classics – no fancy stuff, just the stuff of your childhood. So with strawberries coming into season here this week and the weather hotting up (May, you were a dissappointment), I got a hankering for a classic victoria sponge. But, because everything is cuter is individual portions I made a victoria sponge batter (by dumping everything into my food processor) and spooned it into a muffin tin, popped them in the oven and kept a close eye on them until they were tall and golden and ready to take out.

Then, simply leave to cool. Cut in half and fill with strawberry jam, fresh cut strawberries and freshly whipped sponge. As a final touch, dust with icing sugar. And how delicious do they look? I tell you that they taste even better. With a cup of tea or a glass of cloudy lemonade….Ah, summer has begun…
